Default No bake, Induction Vanilla Cheesecake (small portions!)

Ok so I was looking to make some sort of cheesecake-like dessert and basically took a few recipes and mixed them together. The outcome was GREAT, but then again this is my first low carb dessert.

Ok this makes approx. 4 servings at about 5.5 carbs each slice, including whipped topping.

CHEESECAKE RECIPE:
Ingredients:
-8oz Philadelphia Cream Cheese (full fat)
-1/2 a packet of Knox unflavored gelatin
-1/4 cup granulated Splenda
-1/2 tsp Vanilla Extract
-1/4 tsp Sour Cream
-1/4 tsp Ground Cinnamon
-1 tbs Heavy Cream
-1/2 cup Boiling water


Directions:
-Mix Gelatin Mix and Splenda with the Boiling water. Wait til it is FULLY dissolved (approx. 5 mins)

-In a seperate bowl mix cream cheese with vanilla until it is smooth and creamy.

-Add sour cream, heavy cream, stir. Add cinnamon, stir until well blended.

-SLOWLY add in, the gelating/splenda mix into the cream cheese mixture. Stir until fully creamy and smooth.

-Pour into medium bowl (to allow the mixture to spread out a bit). Mixture should be about 1.5" high once spead out in the bowl.

-Refrigerate for 1.5 - 2 hours

-LIGHTLY sprinkle a LITTLE bit of ground cinnamon on surface, with your fingers.

-Cut into 4 squares/servings and serve with freshly made whipped cream ontop.

WHIPPED CREAM RECIPE:
Ingredients:
-1/2 cup Heavy Cream
-1 tsp Vanilla Extract
-1/2 tbs Granulated Splenda
-tiny pinch of cinnamon(optional)
-pinch of cream of tarter

Directions:
-Pour all ingredients together and mix until you achieve desired consistency. Should be fluffy and light, with subtle taste.

-Serve fresh ontop of slices
