No bake, Induction Vanilla Cheesecake (small portions!)
 
Ok so I was looking to make some sort of cheesecake-like dessert and basically took a few recipes and mixed them together. The outcome was GREAT, but then again this is my first low carb dessert.

Ok this makes approx. 4 servings at about 5.5 carbs each slice, including whipped topping.

CHEESECAKE RECIPE:
Ingredients:
-8oz Philadelphia Cream Cheese (full fat)
-1/2 a packet of Knox unflavored gelatin
-1/4 cup granulated Splenda
-1/2 tsp Vanilla Extract
-1/4 tsp Sour Cream
-1/4 tsp Ground Cinnamon
-1 tbs Heavy Cream
-1/2 cup Boiling water


Directions:
-Mix Gelatin Mix and Splenda with the Boiling water. Wait til it is FULLY dissolved (approx. 5 mins)

-In a seperate bowl mix cream cheese with vanilla until it is smooth and creamy.

-Add sour cream, heavy cream, stir. Add cinnamon, stir until well blended.

-SLOWLY add in, the gelating/splenda mix into the cream cheese mixture. Stir until fully creamy and smooth.

-Pour into medium bowl (to allow the mixture to spread out a bit). Mixture should be about 1.5" high once spead out in the bowl.

-Refrigerate for 1.5 - 2 hours

-LIGHTLY sprinkle a LITTLE bit of ground cinnamon on surface, with your fingers.

-Cut into 4 squares/servings and serve with freshly made whipped cream ontop.

WHIPPED CREAM RECIPE:
Ingredients:
-1/2 cup Heavy Cream
-1 tsp Vanilla Extract
-1/2 tbs Granulated Splenda
-tiny pinch of cinnamon(optional)
-pinch of cream of tarter

Directions:
-Pour all ingredients together and mix until you achieve desired consistency. Should be fluffy and light, with subtle taste.

-Serve fresh ontop of slices

You can also add an extra tsp of Splenda and a tsp of cocoa to the whipped cream to make chocolate whipped cream. The slight bitterness works even better with the sweet cheesecake! :thup:

Welcome, Pink Pearl.
You write you are on the Atkins plan, but have not read any books. It would be helpful if you do so that you understand the plan, or at least follow the rules here: http://forum.lowcarber.org/showthread.php?t=236482
Cheese is limited to 3 oz for the day, and granulated sweeteners are limited to 3 tiny packets and cream to 1 oz. The amounts of sweetener and cream in your recipe, even per one small serving, increases the carb count well over the daily limit. It is better in induction to get most of your carbs from vegetables, and easier to adjust to low carb eating if you can avoid all artificial sweeteners.

The official atkins website states we can have 2-3tbs of cream :)

Also, 1/4 cup of splenda = 12 teaspoons of splenda

2tsps of splenda = 1 packet of splenda

So I am using 6 packets for the mix and you would divide that by 4. Even with the whipped cream you will be consuming about 2 "packets" of splenda total.
And depending on how much whipped topping you put you will be consuming anywhere from 1.5-2.5 tablespoons of cream.

All of this is perfectly allowed and I have been losing a pound a day eating this way...but thanks for your concern.

To clarify for others about Splenda use, 1 packet equals the sweetness of 2t of real sugar.
But 1 packet only contains about a 1/4 t of Splenda. So 1/4 cup of Splenda is about 48 packets and one serving of this recipe would be 1/16th.
1oz is 2T, so if you don't use cream in hot drinks, some topping would also fit in.

The issue with Splenda on low carb is not so much the sucralose, but the dextrose and Maltodextrin in granulated. As with all foods, YRMV, so just track your reaction to and weight loss if you use it. Some bakers substitute liquid sucralose to reduce carbs and sugar...that might work in this recipe.

Hi Janet,

Perhaps you're not aware that Splenda is also available as a granulated spoonable powder, which measures exactly the same as sugar? It does have the same fillers as the little packets, but it's been "fluffed up" to provide bulk.

1 cup of granular splenda = 24g carbs/96 calories ... and is equivalent to 24 of the individual packets.

1/4 cup granular splenda would yield 6g carbs; as PinkPearl noted it's equivalent to 6 individual packets.

Divided into 4 portions, this recipe provides the equivalent of 1½ packets of sweetener per serving, which fits within the sweetener allowance for Atkins' Induction phase.


As for the cream allowance ... not everyone is following Westman's NANY. There's a sticky thread in the Atkins section of our forum .. Atkins Induction Acceptable Food List, which is based on the last edition of DANDR (2002), written by Dr. Atkins himself.

PinkPearl's recipe fits within these quidelines and would be suitable as an occasional indulgence for Atkins' Induction level, keeping in mind the overall daily limits for cheese, cream and sweetener.
