Default Dragon's Breath Salad

This definitely my new favorite, my brother made this for us this evening knowing that we are LCing and man was it good, like a mix of Ceasar and blue cheese, we had it with grilled shrimp and also grilled the lettuce and lemons, if you like to cook and want to try something different, I guarantee that your friend's heads will blow off!!

This snappy salad is a tribute to the season's rising temperature. The secret is in the dressing, which uses an enticing blend of three cheeses, two oils, Worcestershire sauce, dijon mustard, capers, roasted garlic and more. You may need a mint afterward but it's well worth the experience!

Dragon's Breath Salad

1/4 cupDijon Mustard50mL
1/4 cupParmesan cheese, shaved50mL
1/4 cup
1/4 cuproasted garlic
8egg yolks
2 cups
olive oil500mL
2 cups
canola oil500mL
1 tbsplemon juice
15mL 1 tsp Worcestershire sauce15mL salt and pepper 1/2 cupcreamy blue cheese (such as Dragon's Breath Blue)125mL 1/2 cupDanish blue cheese125mL

Place Dijon, Parmesan, capers and garlic in food processor and process until smooth. Add egg yolks and blend with Dijon mix. Very slowly drizzle in your olive and canola oils to emulsify, making sure not to split the dressing. Season with salt and pepper, lemon juice and Worcestershire until desired flavour is achieved. Fold in crumbled cheeses.

Romaine Hearts

Parmsesan Cheese, shaved

lemon wedges

Sprinkle dressing on half a romaine heart and top with capers, bacon, Parmesan, and a grilled lemon wedge
