Default LC Green Chili Chicken Enchiladas

I hope you enjoy this as much as I do.

Low Carb Green Chili Chicken Enchiladas

Ingredients
• 1 boneless, skinless chicken breasts (can also use ground chicken)
• 1.5 cups cheddar cheese
• 1/2 cup Heavy Cream
• 1 scallion
• 4 egg whites
• 12 TBL 505 Southwest Green Chili Sauce

Directions
1. In a mixing bowl add eggs and half and half. Beat on high speed till well blended. Heat up crepe pan or small skillet and add spray with Pam. Pour just enough egg mixture over the pan to coat. Allow to cook through, you may turn it, but don’t have to. Repeat till all egg mixture is gone. This will make approx 6 crepes. Inside a baking dish place one of the egg crepes and coat with a small amount of sauce. Add chicken, a small amount of cheese and roll. When all are rolled top with remaining sauce. Sprinkle chopped green onion and cheese on top and bake at 350 for 10-15 min or until cheese melted and a little bubbly.

2. Total Carbohydrates: 9.5.

3. These freeze well. I put them in individual servings and that way I can have a quick meal. Serve with sour cream, avocado and a few black olives. These Crepes also work well for manicotti.

mmm. that sound delicious. Is that 9.5 grams of carbs per serving or in total?

I am sorry. I made an error in calculation. it shoud have been a total of 15.5 carbs. 2.58 carbs per enchilada.
