Thumbs up Low Carb Rye Bread{bread machine}

Hi....I haven't posted in a long while due to health problems.Also couln't remember my old user name from last year!
I have recently bought a bread machine and decided to experiment with a low carb bread.I came up with this recipe and it's pretty darn good!

Rye Bread{Bread Machine}*****

Recipe By : Carol Williams
Serving Size : 20 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

1 1/8 cups water -- baby bottle warm
3 tablespoons olive oil
1/2 cup wheat gluten -- Bob's Red Mill
1/2 cup oat flour
1/2 cup rye flour
1/2 cup soy flour, lowfat
1/2 cup bran
1 tablespoon splenda
1 teaspoon kosher salt -- or table salt
2 teaspoons sugar
2 1/4 teaspoons bread machine yeast

Pour the warm water into the bread pan of your machine.
Add the oil, the dry ingredients in the order given, ending with the splenda, sugar{for the yeast},salt & then the yeast.
Program bread machine to the dough cycle but only do the mix & one knead.
Remove dough from pan, shape into a loaf, lace in a well greased 8" loaf pan.
Proof in a draft free place for an hour or so; until doubled in size.
Bake at 375° for 25-30 minutes.
Remove from pan & cool on a wire rack.
20 slices ~7 carbs minus 1.7 grams fiber= 5.3 carbs per slice

YOU ARE MY SAVIOR GIRL>> I happen to LOVE rye breat and I'm going to bake this one....I happen to own a breadmaker and love it...Thankfully mine comes with a loaf shaped pan..LOL.. I'm no artist here.....Anyone once again wb..and thanks..

I did the changes on my bread......
Omit the oat flour and increase the rye flour to ONE CUP
Decrease the bran from 1/2 cup to ONE THIRD CUP
22 slices = 5 carbs per slice.Not much of a carb saving from my original recipe but there's more of a rye bread taste to it. A friend of mine added caraway seeds to hers.

I plan on making one loaf into dried breadcrumbs for breading chicken, fish, etc.

BTW....I use the dark rye flour as it has fewer carbs than the light or medium.

Hey, Carol, welcome back! I remember you... why didn't you have a Search through the Kitchen forum to find your old ID?

Anyway, wanted to say how nice it is to see another bread recipe, so similar to mine. I posted it in the Reader's Recipes webpage section quite a while ago... you might want to take a look and note the variations:Rye Bread, Oven Baked, 2 1# Loaves

I found this website when looking for decent recipies for a bread machine. I have a Ziorushi 2# bread machine, and I was wondering on the size of this loaf of bread. We purchased a bread machine around christmas-time for the purpose of making our own low-carb bread. It's getting rather expensive purchasing it from the store. I have tried many different ones, without much success. Do you have any information on the size loaf? I think I'll try this tomorrow if I get the chance. Thanks for the recipie. Sounds great.
