Lightbulb McGriddles-Style Pancakes

Don't know if anyone has previously posted this recipe, but it's worth posting again. Earlier this evening, (Saturday), my husband & I wanted something simple for dinner. He said, "How about McGriddles-Style Pancakes?" I think he was actually joking, but it sounded great to me. We cooked some bacon, he actually made the complete sandwich with egg, bacon & cheese; I just ate the pancakes with bacon on the side. Breakfast for dinner. Awesome!

McGriddles-Style Pancakes

Ingredients:
1/4 c Carbquik
1/4 c Golden flax meal
1 pkt Stevia Plus or other AS
1 t vanilla extract, or SF Maple syrup, or any flavor Davinci
1 egg
3 t melted butter
1/4 cup Hood\'s Milk

Instructions:
Mix ingredients and cook like pancakes. Serve with egg, bacon, sausage, ham, cheese, or other ingredients as a sandwich.

54 Calories; 4g Fat; 3g Protein; 3g Carbohydrate; 2g Dietary Fiber

Oh, that sounds really yummy! Do you know if you could substitute almond flour for the carbquik?
