Quick Scrambled Egg Whites
3 X-Large egg whites
1 finely snipped shallot
1/2 med red capsicum, finely diced
Freshly ground black pepper
A little Thai Fish Sauce
1.Place shallot and capsicum in a small microsafe bowl, cover with cling wrap and microwave on High for 2 min.
2.Lightly beat egg whites with a fork, add black pepper and stir into veg mixture.
3.Microwave 1 minute on High, stirring half way thru.
4.Add a little Fish Sauce (or sugar-free Soy sauce) and eat!
