Amount Measure Ingredient -- Preparation Method

1 cup blueberries
3 large eggs
3 large egg whites
3 tablespoons sweetener, Splenda bulk
1/3 cup protein powder, 90% Soya-Pro
1/2 cup light cream
1/2 cup water
1/2 teaspoon almond extract
1/8 teaspoon salt

1. Measure and set blueberries aside to defrost, if needed.
2. Preheat oven to 375F; lightly oil a 9" round glass or ceramic baking dish or pie pan, or coat with nonstick spray.
3. In a medium bowl, whisk eggs and sugar sub until blended. Gradually beat in (on low) in protein powder til blended, then beat on high until smooth; whisk in cream, extract and salt; drain liquid from fruit into batter and whisk until smooth.
4. Scatter fruit evenly in pan and pour in batter.
5. Bake for 25 to 35 minutes or until sides are puffed and golden and centre is just set. Cool on a wire rack.
Serve warm or at room temperature.

Feedback would be appreciated, Luke! It's been well over 4 years since I made this and I was posting it for someone else to have a look at, maybe tweak.

It would be great to see how people like it or if it needs a little something-something...
