Default fried salami

Quick and easy football day treat that was a hit. I was reminded of the ubiquitous sauce for mini hotdogs that involved either bottled chili sauce mixed with mustard or grape jelly mixed with mustard and stirred up a lc version.

Slice a salami (I used Hebrew National which says zero carbs) into medium slices and slice those in half again. Fry in skillet until crisped on edges then turn heat down to low. Add 2T no sugar jam (I used apricot) and an equal amount of mustard (I used French's), sitr to melt jam and mustard and to combine flavors and heat through. Add a few squirts of lemon juice and let simmer in sauce for about 5 minutes. Huge hit! In fact next time I will have to double or triple the recipe. Easy and filling and the only real carbs are in the jam which you can control. Added bonus - only one pan to clean!
