Default Cheesiest Chicken Quesadillas

I made this for my family the non low carb way but this can be so low carb if so desired.

2 LARGE cans Tyson canned chicken
Taco seasoning of choice (1 packet or your own homemade spice creation)
shredded cheese (I used a bit of monterey jack, mozzarella, cheddar)
Low carb tortillas or a homemade flax flat bread

Add drained chicken to a small frying pan and heat on med/high. Add in taco seasoning and with a spoon smash chicken to break into shreds. Add water or chicken broth to keep meat and seasonings from sticking. Simmer on med/low uncovered for about 15 minutes adding water to keep from sticking. You do not want any liquid to remain in pan. Assemble by adding as much of the chicken mix to 1 side of the tortilla and sprinkle with cheese and fold in half. I ended up with 11 quesadillas. Bake at 350 for about 10 minutes. You can brush with olive oil prior to baking and it will crisp up the tortilla more or even pan fry in a small amount of coconut or olive oil. Serve with sour cream and salsa. I fed 5 (4 children 1 hungry DH) with this meal. Also very economical..... Meal cost me $8.00 for ingredients....
