Default Cream dressing substitute for mayonnaise

No, I don't have one -- I'd like one, though. Once, in Denmark, I had a salmon salad that still ranks as one of the best things I've ever eaten. It was in a dressing that was so light -- it was almost like eating a chunky mousse. I asked a Danish friend who said, "Hmmph. Americans put all that awful mayonnaise in salads and everything is so greasy. We use cream." Well, okay.

I don't think it was just dumping whipping cream on flaked salmon, though. Is anyone familiar with this? I'd love a recipe.

Check out the Salad Dressing thread from last month. I posted a recipe for creamy shallot dressing that may be similar to what your looking for.

Folding Dijon mustard or horseradish into lightly whipped cream is delicious on fish. Add salt, pepper, green onions or chives and a bit of lemon juice.

Thank you, Karen. I found the thread -- looks good. The salmon salad dressing had no olive oil in it, though. It had some body -- it wasn't runny, like cream. It was neither sweet nor sour.

Shallots. hmmm. Perhaps that will be my vegetable of the week. I haven't attacked a shallot in 20 years. It's about time.

Hi, I'm not sure if you are still looking for a cream salad dressing, but I found one (it would need to be modified to suit low carb though, and I'm not informed enough to do so... perhaps others here would know??)

Cream Salad dressing
Apr 16 '00


4 egg yolks
1/2cup sugar
1/2 clove garlic
1/2 teaspoon salt
1/2 teaspoon onion juice
1/4 teaspoon white pepper
1/2 teaspoon ground mustard
1 dash of red pepper
1 tblspn. cornstarch
1 cup thin cream
1 cup vinegar
1 tblspn butter

-Combine egg yolks, salt, pepper, mustard and sugar. Beat until thick and lemon color. Gradually add cornstarch after dissolving it in cream. Bring vinegar and butter to boiling point and pour over egg mixture. Stir until creamy and thickened. Add onion juice & garlic. When cold add one cup whip cream. This dressing is delicious for any one who does not like oil dressings.
