Question Meatballs

Does anyone know how to make meatballs without breadcrumbs so they don't fall apart and taste good?
I heard cold meatballs make a great snack.

Just a thought, but wouldnt pork rinds work? They seem to work in everything else

Pork rinds... the duct tape of the LC world.

Yep! Use pork rinds. Egg is enough of a binder too. They won't be as tender as meatballs made with bread, but they'll still be tasty.

I used a small portion of Atkins Baking Mix in my meatloaf, along with eggs. Seemed to work great!!

That's a great idea Glenda. I've also used a small amount of finely ground flaxseed meal.

I use grated parmesan cheese ... Hamburger, egg, italian spices, and parmesan cheese ... tastes good.
