I have quite a few recipes for Carbquick. And, yes it will work much like Bisquick. Remember when you measure Carbquick to stir up with a fork first and then put into measuring cup with a large tablespoon. DO NOT PACK DOWN! I belong to another group that the Chef who creates the Carbquick recipes belongs to. He has give a lot of great recipes and tips.
Here is a pancake recipe:
Carbquik Puff Pancakes (lgpars)
2 eggs
1 cup Carb Countdown 2%
2 1/3 cups Carbquik
2 tablespoons Splenda bulk
1/4 cup vegetable oil
Beat eggs with electric beater until thick and creamy.
(This takes a few minutes, but it is important.)
Blend in milk; add Carbquik and Splenda. Mix just until thoroughly dampened.
Fold in oil.
Spoon onto medium-hot ungreased griddle.
When puffed up, and bubbles begin to break, flip over and bake on other side.
Makes about 15-20 small pancakes.
(I made half the recipe and got 12, between 3 and 4" in diameter.)
Per Serving (based on 8 servings): 195 Calories; 15g Fat (53.8% calories from fat);
10g Protein; 18g Carbohydrate; 14g Dietary Fiber; 50mg Cholesterol; 284mg Sodium

You can experiment and come up with variations on your own that are pretty good. If you recall the Impossible Pies from Bisquick, go to the Bisquick web site and pick up some recipes there and make them low carb. Sub milk with Hood's Carb Countdown, sugar for AS, you know how to do it.
I don't exactly make my pancakes the way this recipe says and I honestly prefer the waffles made with carbquick. Just my preference cuz hubby prefers the pancakes. I use 2 eggs, 1/4 cup oil, tsp vanilla, tsp almond extract, a few drops of FiberFit and 1 cup milk. Then I begin adding the Carbquick a few hefty tablespoons at a time until I get it the consistancy that I prefer. Spray pan with PAM or whatever and make like usual. Serve with butter and LC syrup or jellies.

If you are looking for crepes I would just add enough Carbquick to milk, vanilla, oil, eggs, etc... for the consistancy that you need for crepes. It shouldn't be too difficult, but then what do I know?
