Chipotle Egg Salad
6 hard-boiled eggs, shelled and diced
1 rib celery, finely diced
¼ cup (60 g) mayonnaise
1 teaspoon Dijon mustard
1 Splenda packet or 2 teaspoons Splenda Granular
1 tablespoon sugar-free chipotle powder
5-6 dashes Chipotle Tabasco
Combine all ingredients together and refrigerate for at least 30 minutes before serving.
Yield: 2 large servings
