Default Spinach Pancakes

My first contribution to this forum, and I hope someone enjoys my offering. While I am not a great lover of spinach, I enjoy it in a salad, or in lasagna (which I ate before this WOE). But, even I was intriqued with this recipe. I suscribe to the Kraft Kitchens emails, and they send me a great seasonal recipe magazine (for free). They also show the carb counts for alot of their ideas - however this one they didn't, but I think we are pretty safe. Here goes:
SPINACH PANCAKES pre: 10 min. Total time: 30 min.

-Mix 1 (10 oz) pkg of frozen chopped spinach, thawed and drained, one small onion chopped , and 8 slightly beaten eggs in large bowl.
-Heat 2 Tbsp oil in large non-stick skillet over medium heat. Pour about 1/4 cup egg mixture per pancake. Sprinkle about 1 Tbsp. Feta cheese on top of each pancake .
-Cook 2 min. per side turning once, until pancake is golden brown on both sides. Top each serving with 2 Tbsp. sour cream, if desired. Makes 4 servings (2 pancakes each).

Well, that is it. Hope you enjoy! Any idea how many carbs this might be...providing we choose proper ingredients (the onion might be the worse "no-no") structured by our WOE?

Spinach pancakes are wonderful as a side dish! I've been making my own variation of these, but with cheddar or swiss cheese and more spinach.

You can use fitday.com for recipe counts. For the entire recipe as stated, the nutrition breakdown is:

calories: 888
fat: 57 g
protein: 70 g
carbs: 25 - 10 g fiber = 15 effective carbs

That's using an entire small onion - you could easily cut back. But even if you don't, that's still less than 4 g carbs per serving (2 pancakes)

I've made similar pancakes with fresh baby spinach instead of frozen (I find it a pain in the butt) and they're tasty.
