Lightbulb Hot artichoke dip

Just started atkins and so have been thinking about food quite a bit... FInally thought, hey what is it that I usually can't have on a diet? and lo and behold, works great for atkins . Very simple and I had to give the recipe out 14 times at the last party brought it to.

1 cup parmesian cheese
1 14.5 oz can artichoke hearts (not the marinated kind) chopped
1 cup mayo
1 clove garlic minced or a sprinkle of garlic powder
a squeeze of lemon juice

Mix all ingredients together and bake at 400 for about 25 - 30 minutes, should be hot , golden brown and bubbly.

Serve with endive leaves (works great, tried it last night)

I do a dip similar to this that just adds a box of frozen drained chopped spinach. Try adding some Monterey Jack for an added change too! I just love any type of artichoke dip!!!!

You can use celery sticks to serve it as well as pork rinds. It is fabulous. I made this exact recipe before low carbing and still enjoy it today. In fact, I am going to a party tonight and a friend is making it, she is bringing the celery and I am bringing pork rinds for us and crackers for the non low carbers...

Default Yummy, Creamy, Dreamy Dip

Isn't it just fantastic when an old favourite is a legitamate food choice finally. This is really good. My father has a wonderful garden this year so I just raided it. The english cucumbers cut in 1/8 inch rounds are perfect for this dip, I bet they would be perfect icy cold too.

Would using sour cream instead of mayo change the flavor horribly? I really don't like mayo much but this doesn't ahve a mayo flavor then I'll try it.

Oh my gosh this is to die for. I just made some up and I have at it on celery, cauliflower, and just plain off the end of the fork. It has the best flavor and as for the mayo you cant even taste it. So glad I tried this. Thanks

I bet this would be good as a stuffing for mushroom caps (or any other vegetable for that matter) then baked! How about stuffed into chicken or beef, rolled and baked? You could even add canned crab meat and stuff salmon with it then bake. Sounds like party food! Thanks for the recipe.
