almond and onion salad
Serves two as a light meal, and four as a side dish for dishes like curry.
Salad:
2 onions (chopped)
3 tablespoons of almond meal or crushed/ground almonds
Salt
1-2 tomatoes (chopped)
1/3 lettuce (shredded)
Dressing:
1-2 tablespoons mayonnaise mixed with 1/4 tsp on more of made
mustard or mustard powder, plus a little cream or water.
Fry the almonds with the onions and a little salt until the onions are transparent.
Toss the tomatoes with the lettuce, then pile the onion mixture on top. Serve with the sauce on the side.
