Thanks Damsel. I've been reading about clotted cream in a number of posts and yet it's not available in the stores I shop at. ![Frown](/images/smilies/frown.gif) It sounds great. I belong to a food co-op and I bought a case of organic cream. It was way too much and had to freeze some. When they thawed, the cream had clotted, making it have a think, bumpy texture. I was wondering if it was the same thing... ![Confused](/images/smilies/confused.gif) I could pour off the liquid part and just use the bumpy (clotted) parts. What do you think?
