Cauli-Fried "Rice"
 
Not sure where I got this recipe originally, but I didn't see one like it here on this site, so here it is....

Cauli-Fried "Rice"

1/2 head cauliflower, grated with a cheese grater - should make approx 3-1/2 cups
3/4 cup frozen carrots and peas
3 green onions, sliced and separated whites from greens
1 clove garlic, minced
1/2 tsp ground ginger
3 T. soy sauce
3 eggs, beaten
toasted sesame and/or vegetable oil

In wok or lg skillet, heat enough oil to cover the bottom of the pan. Saute garlic and white part of onions for 1 min.
Add grated cauliflower and cook for 4-5 minutes stirring constantly. Add peas and carrots halfway through.
Add soy, ginger and green onion tops . Stirfry for 1 min.
Push all to one side of pan or to outside edges.
Add little bit more oil to empty spot and pour eggs in.
Scramble eggs until set but still moist.
Stirfry all together for 1 min. then remove from heat and enjoy!

Also, you could add cooked meat if you wanted, beef, chicken, shrimp, whatever.

Feel free to omit peas and carrots for induction, or adjust amount for your particular carb level. btw, La Choy is a good gluten-free soy sauce, if you are looking.

My hubby, who swears he hates cauliflower and "WILL NOT" eat it, ate this and looooved it. Has no idea that it's cauliflower!! I told him it was low-carb "fake rice" and he said he liked it better than "real rice" - LOL!!!

Thanks for sharing the recipe. I made it for the first time tonight (with minor variations and no peas & carrots). While I think it tastes great, I wish I had checked out the carb count first. I made the entire recipe, had half for lunch and half for dinner before plugging it all into MyPLAN. I got 41 grams of carbs (22 effective grams) for the whole recipe (my version), a little higher than I would have liked.

Still, it's a great tasting way to sneak in my veggies.

I made this last week for hubby and he liked it! I didn't put in peas or carrots though. I know the carb count wasn't that high. I made chicken stir fry with it (with green and red peppers).

Here's my slightly modified version as plugged into MyPLAN: no peas or carrots, and onion flakes and garlic powder instead of fresh, and I included some ham and sesame seeds to make it more like pork fried rice.

I should have clarified that the 41 grams of carbs were the NET carbs. Effective carbs were actually 29.

A great recipe. I highly recommend it to those who haven't tried it.

We're making this tonight so I'm looking for variations. I usually add curry powder or saffron spice to the eggs when I cook them to cut into strips ( I put some into the main body too).
I like toasting sesame seeds to put on top. I also like bits of chopped up bok choy this give it a bit of crunch.

Looking forward to hearing what you also put in.
