Jello Salad
Ok - here it is - my Mom's famous jello salad!
1 package sugar free jello - any flavor - prepared according to directions and chilled to almost set 8 oz. cream cheese - soften with about 4 oz. sour cream add nuts - a handful - I use pecans (Yes, use two containers at this point!) When jello is mostly set-up, add a layer of jello, a layer of cream cheese mixture, a layer of jello, etc. Looks great in a truffle bowl for Thanksgiving- but I make individual servings in old yogurt containers - 8 oz. each - portable and just perfect for breakfast or snack. A variation on this...
Prepare one package of red sugar free jello and pour into an 8 or 9 inch square glass baking dish. Let set.
Spread on a layer of sour cream. Prepare a package of green sugar free jello and carefully spoon onto the sour cream. Let set. Cut into squares and serve. I tried this one Christmas years ago and my family said, "you dope, you are supposed to use whipped cream not sour cream!" Nobody ate it but me. It really is quite delicious. It can also be made in individual serving containers so it is portable and easier to count the calories, fat, carbs. |
