Japanese Cucumber Salad
The cucumbers looked good at the store so I altered an old recipe I had. It's refreshing.
3 cucumbers - sliced (get out the food processor to make it easier) 1 tsp. salt 2 T rice wine vinegar Dressing: 5 T. rice wine vinegar 1 T. soy sauce 2 T. Splenda 1 tsp. salt Sprinkle the sliced cucumbers with 1 tsp. salt and let stand for 10 minutes. Squeeze out the water and sprinkle with 2 T. vinegar. Pour the dressing over the cucumbers and stir in to coat. Serve or refrigerate. |
I make a variation of this salad all the time. I do add about 1/2 tsp of toasted sesame oil to the dressing. That gives it a nutty flavor. I love this salad......oh yeah, I sometimes add chopped green onions as well.
