These are INCREDIBLY good, hot out of the oven.

2 cups walnuts or pecans
2 egg whites
1 Tbsp. pumpkin pie spice or apple spice.
1/3 cup Splenda brown sugar replacement
Or mixture stevia/splenda to taste/Erythritol etc.
(I used 3 packets Stevia)
1 tsp. rum extract

Grind nuts until fine in a food processer. Combine with sweetener and spice. Beat the egg whites and flavoring until stiff, then fold in the nut mixture. I dropped them in little heaps onto a pam sprayed pan, you can also rol l them into balls and flatten a bit with a fork if you like.

Bake at 350 for 15-20 minutes depending on size of cookie you make.

that sounds awesome. i bet that recipe would make a great meringue cookie if the nuts were omitted...
