I've just made low carb carrot cake. It was great to here goes:

60g ground almonds (almond flour)
40g soya isolate powder.
One level teaspoon baking soda.
2 heaped spoons slenda powder
80g grated carrot
1 teaspoon vanilla flavouring (optional)
2 teaspoonfuls rum flavouring (optional)

3 med eggs
30g melted butter
3 dessert spoons cream

Beat the three liquid ingredients together and then blend in the dry stuff. Mix it all very well.

Put into containers and either - nuke for 2 mins or bake for about 5 - 10 mins.

The above made one cake about 4 x 4 to 1.5 inches and 12 little cakes.

Can anyone tell me the difference between isolate and powder and could I use whey instead of soy?

Also if I don't have either to hand, how could I change the recipe?

I was thinking it might be interesting to switch the carrot for parsnips.

Parsnips taste like very mild carrot and I think it's lower-carb too... What do you think?

Parsnips are not low carb, they're nearly as high as potatoes.

Oh? Where did I read they were lower carb then? Hmmm... good thing I don't like carrot in the first place so didn't have parsnips either ;)

Parsnips are net carb 13 per 3 oz, potatoes are 19 per 3 oz, carrots are 5 per 3 oz.
