Default Beer Braised Chicken

So I was watching 5 Ingred Fix and saw this recipe, I changed just a couple things. We had it last night and it was very good.

1 whole chicken cut into quarters, with skin (I used thighs and legs)
1 stout beer (I used Michelob ultra amber, has 3.7 carbs)
6 slices of bacon
1 fennel/anise, (I used 2)
1 to 2 tbs cider vinegar

Brown bacon bits in large pot/pan with a lid that is oven proof at 400. Remove bacon and set aside. S&P chicken on both sides and then brown with skin side down first. Take out chicken and set aside. Place chopped fennel/anise in the pan and brown lightly until soft. Add beer and deglaze bottom of pan. Place chicken back into pot and cook in oven for 25 to 35 mins.

Remove pan and chicken and put in cider vinegar and reduce until about half the liquid is gone. Then poor over the top of the chicken on serving platter and top with broken up bacon pieces. This is kind of a sweet/sour chicken that is very moist and lots of flavor.
