Default Butter is a wonderful thing

In this study, pointed out by Dr Eades, using butter on a potato lessens the effect of the carbs on the postprandial rise in glucose levels.

Makes me wonder if an occasional potato, slavered with butter, might not be such a bad food choice, at least for maintenance.

I wouldn't mind eating more butter, but that's a problem when you're not on maintenance--what to put it on that isn't carby.

Butter on steak is awesome. If you never had it you might think it's weird, but after you taste it you'll change your mind. You can mix butter with fresh herbs and garlic, or shallots and then store it in the freezer (shaped like log and wrapped in plastic). It really adds to flavor.

Lots of very high end Steak restaurants cook their steaks with noting but salt and pepper over a wood fire and "finish" the steak with a bit of butter slathered across the steak. And folks pay big bucks for it. This is what makes a steak a steak IMHO.

No sauces, no funny stuff, just a bit of sea salt, a bit of fresh cracked pepper and butter.

BTW, I bought some organic "Cultured" butter last time I went to the health food store, oh my Lord! I spent the whole life of that 4 dollar half pound of butter looing for things to put it on! YUM!

This is *exactly* how my hubby makes steak. And there is a reason why this is how the high-end restaurant do it, because it's awesome! It's almost a ritual now. We sit down in front of our plate, and he declares "We'd pay a fortune for this in a restaurant!" and we laugh and dig in.

We like butter mixed with Blue cheese, about a 50/50 mix. Very nice on a steak.
Compound butters also good. Die-hard paleos (no dairy) eat your hearts out. Show me the evidence.

Here in Germany it's "de rigeur" to put herbed garlic butter on your barbecued pork, I especially like it on the neck cuts of pork which are extra fatty anyway... Keeps you full for hours!!!
