Default Pecan-Praline Cheesecake

This is really just the mock danish. I don't call it that...it doesn't taste like a danish. It looks and tastes like cheesecake. Thought I'd share how I dressed it up for a nice dessert!

One serving, approx 8g carbs, it has some fiber, but I don't really deduct it. You could easily make this into 2 servings.

Here's a picture: Like the PB one, it's not very pretty, but it was very yummy and rich and satisfying.



Cheesecake:

2 oz cream cheese, softened
1 egg, beaten
1 packet splenda
5 drops clear liquid stevia
few drops vanilla

Mix well and pour into greased 6 ounce ramekin. cover w/ plastic wrap and cut small slit. Microwave 1 min at 50% power. Add 5-10 seconds at a time until just set in the center. Invert on serving plate. Either serve warm or chill. Top with pecan topping.

Topping:

Toast 1 ounce of chopped pecans and toss in 1-2 TBL WF SF Pancake Syrup. Pour over cheesecake.

I have to tell you, this dessert is NOT very sweet. My desserts are getting less and less sweet, so if you try this, you may need to significantly increase the amount of sweetener to get it to your taste.

How did you get that to look so.....cheese-cakey?? Looks delish. I bought some pecans today - sounds like a good one to try.

Betsy, I can only guess it's b/c I cook it "gently." One minute on 50 % power, then 10 seconds on full power usually sets it up softly, with a very slight liquid center, which I actually enjoy. I would imagine that that center would firm up if I could ever wait long enough to chill one!

I bet that's it - I am going to try that with my microwave. Mine always come out dry at 100% power. I am for sure baking this tonight!!

It looks delicious! Where do you find the liquid Stevia? At a Health food store? I but Stevia packets at my grocery store, maybe they also carry the liquid.

At my GNC, they carry a brand called NuNaturals clear liquid stevia. It is really good, has a nice, clean taste. You can also get it online. Search for NuNaturals.

OK...then try it with mascarpone! Seriously, this is automatic portion-control. Once the portion is gone, there is no more to keep eating. I *have* to do that for my own self to remain in control--which is why I don't make the "big" recipes of anything...at this point!
