Default Zippy Zucchini

This is a slight adaptation of my aunty's recipe. Serves 2-4

2 med zuchini, finely sliced
1 large red capsicum, finely diced
2 large scallions, chopped
1 tsp dried italian herbs
Freshly ground black pepper
250g Light Ricotta (look for a brand with <1g carbs/100g)
3 X-large eggs
4 X-large egg whites

1.Lightly beat together ricoota, eggs and egg whites, adding herbs and spices.
2.Fold in prepared vegetables and transfer mixture to a large pyrex dish.
3.Microwave on High for 5 min, then on Medium for a further 5 minutes.
4.If mixture is still not set in middle, microwave for a further 2 minutes on High.
5.Allow to stand for several minutes. Serve hot or cold.

Total calories(whole recipe)=620
Fat=27.5g
Protein=74g
Carbs=22g
