Default Fast and Easy: Sweet pickled veggie salad

This is a sweet and sour salad you can make in a few minutes. It is wonderful for summer. I think it'd be a great coleslaw type of salad with some colorful sweet peppers.

Take any vegetable you think would be good, I've used cucumbers and cabbages (chinese style cabbage, like savoy) so far. You could even use a mixture of veggies. Chop them into bite sized pieces. For cucumbers I peel, de-seed them and cut into half-moons.

1/2 cup of vinegar (Rice wine is best, white distilled is fine)
1/2 Cup of water
1/2 Cup of Splenda (or equivalent sweetener)

Mix the vinegar, water and splenda together. Pour over the veggies. Sprinkle the veggies with dehydrated onion and (optionally) red pepper flakes for a bit of a kick. Mix well and let it marinate awhile.

When you've eaten out the veggies, just add more and mix again.

Oh yessss, Mom used to make this and it was the hit of the parties...

Sometimes just vinegar, splenda and cucs are yummy too (although I like halves of cherry tomatoes in it)
