New bean dip - South Beach Friendly
So, I love hummus, but needed a change. Found a new recipe in Cooking Light - but lacked ingredients. Here is what I came up w/ & it's nice.
Ingredients:
1 can of butter beans
2 to 3 Tbsp extra virgin olive oil
2 to 3 cloves garlic
1 or two Tbsp tomato paste
Juice of ~ 1/2 lemon
Chop or crush the garlic.
Drain the can. Put beans in the food processor. Grind.
Add the olive oil, ( 1 to 2 Tbsp)
Add the garlic. Grind.
Add the tomato paste. Grind.
Add the lemon juice. Grind.
Taste. Need more olive oil? Add.
I don't think it needs any added salt, but YMMV.
Good as dip or for putting in a salad to give it some heft.
