Broccoli Spinach Souffle
I used this recipe for the past couple of years until I lost it. But I found it so I thought I would share it here on the forum.
Broccoli-Spinach Souffle
1 package (10oz.) frozen, chopped broccoli
1 package (10oz.) frozen, chopped spinach
1/2 cup sour cream
3/4 package onion soup mix ( I have never added this)
2 eggs beaten lightly
2 tablespoons mayonnaise ( I use more about 4 tablespoons)
1 tablespoon flour (this is not enough to hurt you)
1/2 cup water chestnuts (I have never used these)
1 cup cheddar cheese (I use more) depends on how much you like.
Cook broccoli and spinach according to diections on package, drain well
I steam both togeather.
Mix sour cream, eggs, mayo, and flour well, and stir in vegetable mixture and water chestnuts.
Pour into a casserole dish.
Bake 20 minutes at 350 degrees, then sprinkle cheese on top.
Contuinue baking for 10 minutes or until chees is weel melted, and casserole bubbles at edges.
6 servings, 5 carbs (if you use the 1 cup of chedder cheese) if more add another carb or 2.
If you like the onion soup mix and the water chestnuts use them and see how it comes out. I never really cared for either, so I never added them. That and not using the onion soup mix lowers the carb count too.
