Default Battered fried pork chops

I made these again tonight and remembered to take a picture this time!

8 pork chops or pork steaks
1 cup atkins bake mix
4 eggs
black pepper
steak seasoning
onion powder

heat some oil in a skillet
season chops with pepper, stk seasoning and onion powder to taste
don't add extra salt because there is plenty in the steak seasoning
scramble your eggs in a bowl and dip the chops into the eggs and then coat with the bake mix
fry until brown on one side and then flip and brown the other side
only flip once or the batter will come off
If they are thick cuts of meat, finish the centers in the oven at 300 degrees for 15 to 20 minutes
enjoy!

This is a great batter for lots of different meats, I have used it for chicken strips too! I bought that $12 canister of atkins bake mix and tried to make some bread which went directly into the garbage. So, I was stuck with the bake mix and now I buy it only to fry stuff in. I have also used it to coat fried eggplant and fried okra.

I have carbquick. I guess I could do the same with it. I haven't been too thrilled with it for bread things- like muffins and all- so maybe it will be good for breading. It would be good for fried green tomatoes ( I love those things!) Can't wait to try that.

Oh, thank you so much for posting this recipe!! I have a pork tenderloin defrosting for dinner and was just craving my recipe for breaded pork medalions from years back. Now, with your recipe, I can have them again! Can't wait for dinner now.
