Default Decadent Hot Chocolate (think Chantico-LITE)

Inspired by Starbuck's latest temptation and the movie Chocolat, I tried to create a rich hot choclate drink that would be easy to make at home and friendly for those of us watching our food intake when we need that occasional treat.

Andra's Decadent Hot Chocolate

In a two cup Pyrex jug put 3 generous tablespoons of your favorite sugar free cocoa powder (Nestle, Ghiradelli, Sharfen Berger etc.) Add two tablespoons of your favorite sugar substitute (I used erythritol), a pinch of cinnamon, a pinch of cayenne pepper, half a teaspoon of good quality instant coffee and a pinch of salt. Mix well. Add one tabelspoon each of sugar free chocolate and vanilla extracts and one ounce of DaVinci gourmet sugar free vanilla syrup. Mix into a paste. Add hot water until the one cup mark on the jug and keep mixing until everything is dissolved. Pour regular or fat free half and half up to the two cup mark on the jug. I used equal parts of both. Stir and microwave two minutes until gently heated.

This makes 2 one-cup servings or 3-4 demitasse servings. I had one third of the mixture in a small mug. I admit it was quite hard to cover the leftover portions and put it in the fridge. Oh my, it's really good. The kick from the spices and the richness of the cocoa really satisfied my chocolate (but not my Johnny Depp) craving.
