Default Strawberry Clafoutis

This could be made with any berries. I intend using frozen raspberries next time.

Serves 6 to 8.

1 punnet/250g/8oz strawberries, washed, hulled and halved
3 eggs - separated
1/3 cup Splenda
OR
4 Splenda tablets or 4 teaspoons Splenda
4 teaspoons Canadian Sugar Twin
45 mL/3 N. American tablespoons almond meal
75 mL/ 5 N. American tablespoons vanilla favoured whey protein powder
160 mL/ 2/3 cup cream

Preheat oven to 180ºC/350ºF. Lay strawberry halves in well buttered 23 cm/ 9 inch flan dish.
Mix egg yolks, sweetener, almond meal, protein powder and cream well together. Whisk egg whites until soft peaks form, then carefully mix into the egg yolk mixture. Pour gently over the strawberries, and place into oven for about 30-40 minutes, or until toothpick inserted into centre comes out clean.

Carb counts will vary depending on your brand of protein powder, and which sweetener combination you use.
My carb count, with Spenda tablets and Sugar Twin:
29 - 7 fibre = 22 (for entire recipe)

Note - this recipe is not suitable for Induction.
