Default Mexican Fried Icecream!Yummie..

I made a LC version. Gosh it was sooo great.

You can use any LC icecream an make your whipping cream to top on the fried icecream.

1st: Scoop individual balls of icescream. Place back into freezer for a few hours until hard. Take out an have your favorite nuts grinded. No need to toast since you will be frying icecream. I grinded my almonds and added some ground cinnamon and splenda to taste.
2nd: Place your ground nuts and cinnamon together in a dish that you can roll your scoops of icecream. Pick scoop up and press as much of the nuts as possible.
3rd: Back into freezer for a few hours to harden.
4th: Beat an egg an dip each scoop of icecream into the egg mixture. Immediately dip an roll scoop into remaining nuts. Press the nuts into the ball. Place backinto freezer until hard.
5th: Heat a small heavy pan that will hold about 3" of oil. I used peanut oil or you can you vegetable oil. Let heat upto 365.
Immediately place one hard scoop fresh out of the freezer carefully into the hot oil. Only for 30-40 seconds.
Place into a pretty glass or dish. With a topping of your favorite flavored sf cream.
You can get really fancy. Fry a LC tortilla, but first get a piece of wire to tie the middle of the tortilla to give it a fan look. First cut a 1/2 inch of the top an bottom after you have tied the tortilla. This will give a more elegant fan look. You need two metal ladels. One big one to hold half of the tortilla and the smaller ladel to press into the bigger one. Basically your sandwiching the tortilla upto the middle half of tortilla. Fry with ladel until brown. Immediately sprinkle with cinnamon mixed with splenda.
Lay your masterpiece tortilla in a glass or pretty glass bowl , your fried icecream ball and a spoon of whipping cream garnished with a stick of cinnamon an a sprig of mint. It looks very elegant in tall wine glasses. See we LC have great taste and presentation, an your guest will never know. This is really fast an fun. Yet so beautiful.

Let me know how you enjoy your fried scoop. The icecream is still cold with the outer layer slightly warm.

Hi Jade74

Oh I must tell, when you fry the tortilla. Drip dry, then melt two tablespoons of butter and spread on fried tortilla, then shake cinnamon/sugar.

I really enjoy making this. It's so fast, only have to wait for the icecream to harden to add the crunch.
