Default Veggie salad (no lettuce)

This salad is really yummy...you make it ahead of time because the longer it sits the better it is. You could do it without the carrots and it would be very legal!

1 bunch broccoli (about 3 cups florets)
1/2 head cauliflower (about 2 cups florets)
5 baby carrots or 1 1/2 small regular carrots
1/2 small sweet onion
1/2 pound bacon, cooked crisp and crumbled
1 cup shredded cheddar cheese
1 cup mayonnaise
2 tablespoons granular sugar substitute
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper


1.In a food processor pulse broccoli, cauliflower, carrots and onion separately until vegetables are the size of peas.(If you don’t have a processor, very finely chop the vegetables.)Place in large bowl. Add bacon and cheese to the vegetable mixture.
2. In a small bowl whisk mayonnaise, sugar substitute, vinegar, salt and pepper to combine. Pour dressing over vegetable mixture and stir until ingredients are thoroughly combined.

I had this on Saturday and it was so good!!! I didn't add the carrots or the onions but it was delish. Thanks for Sharing!

Hey, I made this today and it was soooooooooooooooo good and my sister came by, who will not touch a veg and loved it... Without the carrots though, Do you happen to know how many carbs? I tried using fitday to figure it out, and just ended up with a mess! Thank you so much for this one!!!
