I just whipped this up for supper from what I had around the house & it was pretty good. The measurements aren't exact because I like to just throw things together. It looks like alot of ingredients but it's pretty simple.
1/4 onion chopped
3 stalks celery (from heart) chopped with leaves
1/4 sweet red pepper chopped
2 T butter
2 T garlic puree or 3 cloves chopped fine
1 lb raw, peeled & devained black tiger shrimp
1/4 cube chicken stock
1 T garlic puree or 3 cloves chopped fine
4 oz cream cheese
3 T cottage cheese
1 egg
1/4 cup shredded mozza cheese
1/4 cup heavy cream
parsly for garnish
Mix 1 T garlic, cream cheese, cottage cheese, egg & cream with electric mixer. Add mozza & mix a little more. Set aside.
Fry 2 T garlic, onion & celery in butter until cooked but still crunchy. Add red peppers. Mix chicken stock with 2 T hot water & pour into pan. Add shrimp & cook, turning, just until pink
then remove from the pan.
Turn burner to med-low & add cream mixure. Stir contantly & it will start to thicken.
Turn off heat. Add shrimp, stir & serve with parsley for garnish. I also sprinkled some Club House Roasted Garlic & Red Pepper spice on top. It gave it a little more garlic flavour & a nice colour.
