Question Honey?

Hi ~

I'm new to this forum (but not new to the low carb lifestyle) ~ I have siome great recipes that call for honey that I'd like to convert to "low carb" ~ does anybody know if I can just substitute Splenda or other sweetener for the honey . . . Like if it calls for 1/2 cup honey for some cookies will the Splenda substitute be okay or does the honey do something "special" in the baking process like sugar does?

This baking low carb still makes me nuts!

You can, but whatever you're making will be drier in texture. Honey adds moisture and flexibility.

There aren't any good honey subs out there? I would love to have toast with butter and honey as a treat later on

I supose I can stick to nut butters, twist, and steel's *sigh* (just so deprived on this WOE aren't we )
