Default Homemade Low Carb Truffles...YUMMY

I made this yesterday with premelted unsweetened chocolate & they are sooo yummy!






Chocolate Truffles
Makes as many pieces as you cut it into!

2 oz. unsweetened chocolate
4 Tbsp. Splenda
4 Tbsp. butter, at room temperature
4Tbsp. whipping cream, at room temperature
2 tsp. vanilla extract
1 oz. crushed macadamia nuts (optional)

The success of this recipe depends upon the melted chocolate and butter being at the same temperature. If not, the chocolate and butter will separate.

Melt the chocolate either in the microwave or in a bowl over a pot of simmering water. Stir in the Splenda and cool to room temperature. Combine the chocolate and butter until smooth. Stir in cream and vanilla, then the nuts if using.

Spread evenly into a small, parchment lined loaf pan-I use one that was 4-by 7-inches. Chill until firm. Cut into pieces and store in the freezer.

Total Carbohydrates with nuts: 33.85
Total Carbohydrates Minus Fiber with nuts: 29.93
Total Carbohydrates without nuts: 22.21
Total Carbohydrates Minus Fiber without nuts: 20.73

i baked a low-carb cake the other day, and used this recipe as a frosting on the cake. perfect! Mmmm.

Also, mixing it into soft ice cream (le carb) & refreezing it....nice hot weater treat once in a while

I've died and gone to heaven!!! I thought when I started Atkins that I would have to give up chocolate...wow...these are great...Truffles have always been one of my favorite candies and these are some of the best I've had!

Here are some changes I made:

6 Tbls. of baking cocoa
2 Tbls. of oil
1 extra Tbls of splenda

I think I'm going to try them with Davinci syrup to cut down on the carbs...I'm not sure if they will set up right, but it's worth a try.

I'm trying to think of a way to get a hard chocolate "shell" around them, like the Lindt chocolates.

These are my favorite truffle recipe too. I see proper credit wasn't given on them, but they are the Chocolate Truffles By Karen Barnaby

I modified them too, I use pecans instead of macadamia nuts. I tried them with cocoa once, but for myself liked the end result better with the unsweetened chocolate.

I'd be interested in knowing how they turn out with Davinci syrup!
