Default Pepper Jack Ranch Chicken Broccoli

Something I made up last night.

Sauce:

4 oz cream cheese
1/2 stick butter
1 cup HWC
1/4c parmesan
6 oz Ranch dressing
4oz pepper jack cheese

Combine all ingredients and let cook on medium until cheese is melted.

Basically, it is all about the sauce, but I took a bunch of broccoli and steamed it for about 15 minutes until al dente. While that was going on I cubed a couple of large chicken breasts, probably about 2 pounds and fried them in bacon grease. Took a couple of large zucchini and used a peeler to make "noodles". Added the broccoli to the chicken and seasoned with garlic, salt, and pepper.

At this point, you could do things one of 2 ways, either quickly heat the zucchini noodles in a separate pan and then use those as a bed for the chicken and broccoli and top with sauce on the plate. Or, what I did, was just throw the zucchini in with the chicken and broccoli, pur the sauce over top, let it simmer for a couple minutes, and then removed from the heat to let the sauce thicken. Made about 4-6 servings depending on how much.

Got rave reviews from even the non-LC family members.

I don't see any pepper jack in the recipe...or am I blind??

Wow, oops, where was my mind that day?

So add 4oz pepper jack cheese to the ingredients list for the sauce.

HWC stands for Heavy Weight Cream (or Whipping cream).
