Default Jelly/Jam

Has anyone ever made their own jelly/jam? I thought about it the other day and thought since berries are in season I may try it. I could use some help since I am not a great cook! We are also going to a great B&B in NJ and they allow you to pick your own berries and fresh fruit!

I have not made jelly sugar free but I don't see why you could not! I have been mixing splenda with erythritol,to get rid of the after taste you can get with splenda when you cook with it. I would check into different thickners like arrow root. gar gum. or there is another one that I can't remember. Check on the web and see other thickners I am sure you can do it!!!

Here's a quick fact sheet on canning fruit without sugar. Sugar keeps the colour and texture of fruit but you can preserve without it.

There is a pectin called Pomona's Universal Pectin that jells without sugar. I buy it at a natural foods store.
