Rob, I'll report back after I make the lemon curd, because that has always been one of my favorite things, in or out of lemon meringue pie. Can't wait to try it!

My parents will be here this week, so I may make it while they're here.

thanks Karla. I bought some ground pecans this weekend to try with this, and I want to add some spices, like a spice cake, with cream cheese frosting.

Hi Rob ,

I wrote in earlier that I really liked this but as a "corn muffin" substitute, and I make it at least once a week. I decided to try actually baking it in mini-muffins tins in the oven ~400 degrees about 12-15 minutes. They are amazing!!! You would never know they didn't contain flour. They are the closest things to a bread product I've tried so far. Your whole recipe made 12 mini-muffins at about .8 carbs each. Smeared with a little whipped cream cheese - oh baby!

They have re-energized this WOE for me! My husband and I thank you, thank you, thank you!

I am going to try variations of it with different flavorings, maybe a few blueberries. It's a beautiful thing.

Hi, Rob! I made this the other day and I too would like it a bit sweeter... however, my question has to do with the carb count. When I ran this through MasterCook, I ended up with 15 net carbs, not 10. I used "almond meal" in MC, which was about 10 net carbs alone. If I use "ground almonds", that comes out as 16 net carbs. Any idea why my results are different from yours? Not criticizing, btw, just curious as I am a new MC user.

PS I am talking about just the cake part, not including the lemon curd.

Hi there ,

9.5 g ECC for ground almond
0,5 g ECC for each egg

I did not count the sweetener

that is 10.5 g for the cake . I dont know where you got the 15 g from

Anyhow if that makes you happier , then call it 15 g

I am not too fussed about 2 or 3 g carbs myself . Hope that answers your question .

Can you tell me how much the above is in Cups??? I was a little confused with these measurements. Call me blonde!

There's a version in U.S. measurements on the first page of this thread...but I'm not sure if that includes the variations made to it...

Will be giving this one a try today

Where I got the 15 from was by counting (in Mastercook) the sweetener, baking powder and vanilla extract! I guess some of us just like to be more precise!

PS: The US measurement post is for 1/2 the recipe, btw.. There I go again, being precise!

I finally got around to making this. For a sweetner, I used 2 tbs of da vinci french vanilla syrup. Other than that, I followed the recipe to the letter. It's awesome. Me and my ex want to thank you for sharing it.

The lemon curd was awesome. But I had to do it in a sauce pan to make it come out right. Just kept coming out lumpy when I microwaved it.
