Thumbs up Kabobs

My friend just gave me the best Kabob recipe that I've ever had! We had it for dinner last night, and my boyfriend wants me to make more of it tonight!

1 packet of Good Seasons Italian dressing
(made according to instruction except I reduced the oil and added more vinegar because I like them tangy! And I used olive oil)
Any number of chicken breasts (cut them up to 1 inch after marinading)
Green peppers, onion, tomatoes cut into 1 inch blocks
a dash of lemon juice
a dash of soy sauce

Set aside some marinade so you can coat the veggies before putting them in the oven. Marinade meat in the rest of the dressing for at least 8 hours. Cut the meat into 1 inch pieces. Line baking sheet with heavy dury aluminum and put the ingredients in the oven and bake at 400 for about 15 minutes or until the meat is cooked and the onions are sort of browned at the edges. If not, switch over to broil and broil for about 5 minutes until browned. Take it out of the oven, splash some lemon juice and soy sauce. Serve! It smelled so good, and it was really good!

I served it to my boyfriend with rice and he loved it, but I just ate it by itself with a salad, and it was wonderful!

Oops, I forgot to mention adding oregano and basil to the marinade. And don't forget to discard the marinade after using it!
