Thumbs up Fresh Strawberry Cheesecake

Fresh Strawberry Cheesecake --

1 pkg gelatin
¼ c water
8 oz cream cheese, softened
4 large strawberries, fresh
1¼ cup heavy cream
1 t vanilla
DaVinci SF Strawberry Syrup

· Dissolve gelatin in cold water and set aside.
· Put 1/4 cup of the cream in a saucepan and bring to a boil.
· Cut the cream cheese into small pieces and stir into boiling cream along with the chocolate until cream cheese is smooth.
· Add the gelatin, vanilla and DaVinci syrup (to suit your taste) and pour mixture into largish mixing bowl and let cool down.
· While this is cooling, whip remaining cream until very stiff.
· After cream cheese mixture is cool, beat well with an electric mixer.
· Dice three largish strawberries and slice one.
· Add whipped cream and diced strawberries to the cream chees mixture and mix again until thoroughly blended.
· Pour into a sprayed pie pan.
· Arrange sliced strawberry on top.
· Chill until firm, about 2 hours. (Overnight is best.)


Calories for entire cheesecake: 1891
Fat for entire cheesecake: 191
Carbs for entire cheesecake: 22
Protein for entire cheesecake: 30

Looks and sounds amazing. One question, in the directions it mentions chocolate, but I don't see it in the ingredients?

Good catch, C-u-lean! That was my mistake... obviously! I modified my chocolate cheesecake recipe... and forgot to omit that. NO CHOCOLATE in the strawberry recipe. It's too late to edit that out... so here's the edited version:

Carol,
I am about to go make this cheesecake to take to a dinner party tonight. I have a couple questions. What is 'O cup? And I couldn't find DaVinci Strawberry syrup. Do you think it would turn out okay if I used strawberry jello instead? Should I add more water? Thanks!

I don't know what you mean by this, CU... "What is 'O cup?" Did I make a typo that I'm not seeing?

And yes... I think that Strawberry Jello would work just fine. I'd use 1/2 a package... and omit the gelatin in the recipe. I doubt that using more water would be necessary... just use the same 1/4 cup to dissolve the gelatin that's in the Jello. Then before you put it in the pie plate, give it a taste to see if it's sweet enough for you. If not, add some Splenda.

I don't know where in CA you are. I'm in the Bay ARea. I get the large bottles for about $3.50 at Cash and Carry. Check their website to see if there's one near you. You can also find it at stores like Greenbeanz in the Bay ARea... a Low Carb specialty store... but they sell it for something like $8 per bottle!

Just wanted to let you know I made this and it is WONDERFUL!! I am very glad I tried it, and am encouraged to try more.

By the way Carol, my computer at home must be wacked. When I looked at this recipe from home where it asks for 1/4 cup water and 1 1/4 cup heavy cream O was in place of 1/4. Luckily I came to work and I could see what it said.

Thanks for this great recipe!

I made this yesterday - yum yum!! Satisfies the sweet tooth! I don't have the Cash & Carry down here in S. Calif - I'll keep looking!

Cash & Carry = Smart And Final (I think)
They carry the DaVinci SF syrups but they one I went to did not have strawberry

I think I saw someone mention that they found the syrups at TJ Max. Could check with your local espresso stand to see where they get theirs.
