Default Tuna Melt Salad

This is one of my favorite quick meals and even my kids love it which is a miracle, believe me! I stumbled on it by accident, I was in a big hurry and there was leftover tuna and mayo in a bowl in the fridge. I haven't seen any recipes for this, although I 'm sure they must exist in some form. Anyway, this is what you do:

Mix a tin of tuna with your favorite dressing or just Mayo and some salt and pepper or whatever seasonings you like. A bit of lemon juice is nice too. Be generous with the mayo.

Next spread the tuna mixture in a wide cereal size bowl, and cover with alot of grated cheddar cheese. Microwave on high for a few minutes checking every minute. You want the cheese totally melted and I like when it gets a bit crusty around the edges. Usually 3 minutes.

Arrange lettuce, spinach or your favorite greens on a plate. You can add any veggies you want. Mushrooms work well. Then spread the tuna /cheese mix over the lettuce, while its still hot. Eat it right away. It is so good, especially in the winter, when you want something warm and filling in a hurry.

I'm not a carb counter, but it should be pretty low in carbs. I now mix up two cans at a time, since my 8 year old always wants some. It is easy to take to work as well. Let me know if you try it!

Hey Foxeylady!

Thankyou so much for this recipe.....! When i started with WOE, i stocked up on lots of tuna and tried to force myself to 'like' it...but just couldn't....
I tried your recipe...and i absolutely love it!!! It's especially yummy when i use tuna in oil (drained), lots of black pepper and mature cheddar...!
Can you believe i ate right through my stock of tuna and had to go out and buy more?!!!?

this sounds really good.....question reena.....did you have it like a salad?

i'm getting sick of salad .....i'm trying to think of other veggies other than lettuce....or broccoli.....although i like it....i feel like that's all i'm eating.....

if you have any idea's for variety let me know

If you have the DANDR book, check out the list of veggies that are allowed on induction; it's huge. There are tons of green veggies you could be eating during Induction. I was just thinking this particular recipe would be good as either tuna or shrimp with the cheese served over some steamed asparagus or green beans.

i'm going to try this today.
finally, a use for my like 100 cans of tuna.

it was very good, i didn't use mayo though, and i added some chopped onion. my parents hate tuna so they were ready to kick me out of the house but it was worth it
