My DH and myself are finally trying the reciepes to get us on the right track. I made this for him last night to have this morning. He loved it! Although I think I told him it was 6 carbs per little square. Opps! I'll correct myself later.

I made a version of this when I was on vacation in a condo in FL. So easy to pop in microwave each AM to heat up! Delish!!

katticus--I know this thread was started a long time ago but I've just started this and found this recipe. It sounds really good. I've just moved to Sydney from the US so I know what Jimmy Dean sausage is. Can you tell me if you have found anything here that is close to it? The closest thing i've found in a tube like the sausage would come in is chicken or dog food hehehe. I guess ground pork might work alright, but it's so hard when I know what I am looking for and can't find it. : (

This recipe sounds like Geo53562 recipe that was posted a month or so ago. It is absolutely delicious. Try adding some green peppers also. Mighty tasty.

Anybody know how long this keeps in the fridge? Or would it be better to freeze. Im planning on making individual muffin sized ones. I dont really want to freeze them. Afraid they wont be the same. Anyone also know the tempreature if Im making individual cups?

leave the temp the same but reduce cooking time by 15-20 minutes--that should do the trick! not sure about freezing, but several here seem to have tried it previously so i would not be afraid to try it.

Default Left over ham, lets give it a try

I have
10 eggs
1 cup whipping cream
1/2 cup sliced mushrooms
1/4 cup chopped green onions
1 1/2 cup of ham (suggested substitution listed later in thread)
1/2 cup aged white cheddar cheese.
1 cup old cheddar
Peppers were also mentioned, I have an orange one so I'll add 2 tbls.

I wanted to make a casserole without cream cheese in it because it has been mentioned that it seems to stall you.

Default It's in the oven

So 1/2 cup of mushrooms is 4 small mushrooms that was a surprise. Used green onion instead of the white onion. So now I just have to wait for it to come out of the oven.
I am totally confused about shredded cheese though. Do you measure using the cup measurement on the side of the cheese package and then grate it....which gives you a large amount of cheese or do you measure it actually shredded that gives you less? I did the second approach but thought that it was obviously too little cheese so I added another 1/2 cup into the recipe.
It smells good atleast.

Ok a newbie review

I'm editing this!
Ok straight out of the oven it's 3 1/2 out of 5

BUT the next day after the flavours come together it tastes fantastic. (It is like chili the second day) The flavour gets much better.
I'm going to make a second one today and try freezing individual portions. I am going to add more orange pepper and cheese this time though.

I have made this with adding New Mexico Hatch Chile (Medium to Hot depending on who will be eating it.). I also use 1 cup Cheddar and 1 Cup Jack Cheese. Keeps well and I can do up the night before I have a brunch.

Wow, I thought I invented this recipe until a few weeks ago. :-) I make this every week for my husband's commuter breakfast. Each morning before he hits the road, I heat up a few squares and he eats it on the road. When I first started, I tried make it using a muffin pan but the clean-up motivated me to find a better way.
