Spicy Squash Casserole
I tried this for a change and it was delicious.
Slice or slice and quarter 4 squash (yellow or zuccini)
Chop up a small onion with them.
Boil until tender, then drain well.
Stir a cup of grated cheese (cheddar)
and 2 tablespoons of cream
I added a crumbled piece of storebought low carb bread, I'm sure some pork rinds would work also.
Add a bit of cayenne pepper or other crushed pepper, and some salt and garlic as you like.
Cook about 30 minutes. (from cold -- probally 20 minutes if you arent planning to make it ahead and refridgerate before baking)
Delicious -- this was spicy and a great new way to eat the squash. It took a bit of time however. I'd advise making up twice this much on a sunday afternoon and putting it in two pans for later use.
I decorated the top with mushroom and a few bell pepper slices. (gotta feel gormet sometimes)
