Cool Demiís Tuna Salsa Salad

1 x 185g tin of Tuna in Oil (0g carbs)
2 x heaped teaspoons (approx 30g) of Hellmanís Mayonnaise (0.4g carbs)
3 x Cherry Tomatoes (approx 50g) (1.5g carbs)
1x Medium Avocado (approx 100g with stone removed) (1.9g carbs)
1 x Spring Onion (0.g carbs)
Lettuce Leaves (approx 0.6g carbs per 35g serving) Ė rocket, baby spinach and lambs leaves are especially nice for this)

Approx 4.4g carbs (fibre already deducted) per serving Ė serves 1

Drain oil from tuna, place in a bowl and mash with a fork. Add the mayonnaise and blend well. Cut the cherry tomatoes into quarters, half the avocado into small chunks, and chop the spring onion into small pieces. Add to the tuna mixture and mix well.

Arrange the lettuce leaves on a plate and pile the tuna mixture on top. Cut the remaining half of the avocado into slices and arrange in a fan on the top of the salad. Sprinkle some parmesan shavings over the avocado (optional).

A great alternative is to use a can of salmon (red or pink) in place of the tuna.

I'm adding this to my summer lunch recipes file. Curious....did you make this ahead for your yoga retreat? How do you keep the avocados from turning?

Yes, I usually do make it ahead. It is something I'll often have for lunch at work during the week, so for convenience and quickness, I tend to make it the night before. As long as you mix the pieces of avocado well in the mixture, then seal in an airtight container (like tupperware, for example) then I find that it's fine and doesn't turn.

Also, to clarify:

When I'm making it to take to work, I don't do this, preferring to cut up the whole avocado and mix it in, instead of leaving half to fan over the top.
