I made it with lime jello over the weekend and it was awesome! I used 12 foil muffin cups instead. Sprayed with Pam and they came out very nicely!

That is a great idea for portion control! And easy to freeze, to eat frozen ~ MMM!!

I am going to make this tomorrow for Sunday dinner. I will be making the family a spice cake ~ so it will be nice to have a treat as well! =) Thanks for posting this!!

I actually only made a 1/2 recipe because I am not crazy about sugar free jello, but this is very good. I 'll be making the rest and buying more sugar free jello soon!

1st time - 1/2 recipe with raspberry sf jello...Mmmmmm
2nd time - Full recipe with lemon sf jello....Mmmmmm

I made this recipe a couple of times years ago. It's actually really great, except... jello flavors are not real flavors. What I mean is, I'm a key-lime-pie freak so I thought that doing a lime version would be awesome. But jello's "lime" flavor is like the CANDY lime, not like the REAL lime, and the same goes for all its other flavors. You know, the 'candy' version of a given flavor is different than the fruit version. So if you like that -- then that's just fine! I'm just warning in advance.

I noticed recently that they now sell sugarfree jello in flavors like "cheesecake" and "custard" so those might be interesting too. I don't think there is a candy version of cheesecake unless we count Sara Lee LOL (which I love way better than NY styles).

I have knox unflavored gelatin and have considered using that but couldn't figure out what I should season it with instead.

One idea is that you could also add (if using knox) something like some canned pumpkin and cinnamon and make a sort of creamy light pumpkin-ish pie. Worth a try.

Default I made this last night!

It was so much fun and it turned out so beautiful! I made it with some of my cream kefir, cuz I had no sour cream. I keep peeking at it this morning. Did anybody say anything about how to cut it? Judging from the taste of the licks (beaters, spatula, bowl, countertop, front of shirt!), it is gonna be fabulous. I need to keep it for this weekend, so I'll freeze it in individual slices. Or maybe I'll make another one. I wanted to do the cupcake things, but I was too tired, so maybe I'll do that the next time. I made the lemon one.

I don't "do" SF Jello because of the icky chemicals, food colorings, etc. Plus, as you say, the taste is just off. The lime is more like a lime Lifesaver - like candy, as you say. So I was trying to think what else I might try.

Yeah, and that is exactly what I was thinking, maybe using Knox unflavored gelatin. I love key lime too and have a bottle of key lime juice in the fridge. I was thinking about adding a couple tablespoonsful of that and just adding some sweetener.
