Does anyone know of a website that gives nutritional information about beef that doesn't say "lean only" or "trimmed to whatever %" ? I'm looking mostly for grass fed ribeye, primerib (steak or roast), T-bone, strip loin and ground beef.
I think the closest you will find is the cheaper ground beef that's > 20% fat then go by weight. Fat weighs less than lean, but packs more calories.
I buy the 27% then add a tray of ground pork fat trimmings or a roll of seasoned breakfast sausage for good measure. That makes a batch of great low-carb hamburger patties and baked meatballs that will last me a week.
It seems that if a cow is allowed to graze on grass, and not be fed the grain and antibiotics they use to "fatten" them up, those meats will be inherently less fatty. I always get grass-fed ground beef as I can pump it up with veggies and flax to get some moisture into it. But I've never had a tender grass-fed steak -- that would be wonderful.
Since fat is cheaper than lean, I assume raw ground GF beef hasn't had the fat removed and use its nutrition data for whole pieces of meat too, using its raw weight since I consume all the drippings too. I use a George Forman grill, collect the drippings in the tray and pour every last drop back over the meat or onto my vegs.

That's what I've made for my GF "go to," GF ground beef 80% lean. I'd go for 70%, but I'm having a hard time finding that amount of fat in healthy ground beef. If I'm cooking ground beef, I usually add coconut oil.
It's the best, really. The perfect mix of fat and meat.
We had the steaks with a small mix green salad and a nice pot of yellow squash cooked with garlic and butter and topped with parmesan cheese.

mike_d - that meal sounds delicious. Is there a recipe or just a casual combination of ingredients?
That mixture does sound good mike d. Similar to a shepherd's pie I make. I just add onions and top it with cauliflower and cheese and bake in the oven. Ever notice how much "comfort food" there is in this way of eating?
