I'm planning to grow some cauliflower in my back yard this year. I REALLY like faux potato salad in the summer.

Wow, great plan!
Current situation at Warmart was frozen 1 pound bag still in stock and for only $1.44. Also enjoy their Caulifower and broccoli mix..a pretty pale green purée side.

At the local Winn-Dixie yesterday they had pre-cut cauli florets at $2.99 for about a pound, not too bad. The whole heads were $3.29 but they were might tiny little heads.

Looks like I am going to plant a lot of cauliflower and broccoli too this year. They do fabulous here, blanch and freeze so I have a good supply all winter. Last time I planted cauliflower, I was surprised how large they were. It's a bit of work but nice to go to the freezer and have vegetables all winter. I do this with cabbage too which yields a lot, brussel sprouts, green beans even peas- I vacuum pack so they last a while. I did the cauliflower/broccoli mash and it's delicious too.

I live in Alaska so produce is more expensive, but I am almost fell over when I saw the organic cauliflower was $24 a head yesterday!!!

How about frozen cauliflower. Since cauliflower isn't on the dirty dozen list I would be comfortable buying regular frozen cauliflower.

I didn't check cauliflower prices here in Eastern Ontario but Broccoli was $3 a head on the weekend which I thought was overpriced (and they were tiny too). So I bought a frozen mix of broccoli, carrot and cauliflower (california mix) for $1.99.

I'm not especially crazy about fauxtatoes though since I'm avoiding dairy they are kind of bland without it LOL. There are so many other lc veggies I enjoy so I'll put my dollars elsewhere. Hopefully until prices recover, but am seriously considering growing some veggies this summer as well to ease the finances.

I think about it this way when it comes to cost.
One good sized Cauliflower head is 4-5 servings so at $3 per head, that's 60-70 cents per serving.
Now $24 in Alaska is another animal...

I use the Walmart frozen cauliflower for mashed dishes. Only fresh for roasting.

What about frozen cauliflower? It's out there, and the price is stable year round.

My last faux potatoes I made up a big batch using cauliflower and broccoli, i mash them with plenty of real butter. Then when I reheat for my meals, I add in some fatty bacon ends & pieces that I prepared ahead, microwave, add a little more butter and a dab of sour cream. It's heaven and so filling that I don't need to eat for the rest of the day. I have also done this with the frozen vegetable medley. Not thrilled about all the carrots they put in those bags but it's just as tasty. Sometimes I throw out some of the carrots because they are higher in carbs. I also saved the bacon drippings and made a dressing for a warm spinach salad, very good.

I love cabbage sliced very thin and sauteed in butter. It doesn't need to be cooked too much and it doesn't get that characteristic smell. Good luck!
